Logo Design Brief

I'm looking for someone to make a logo for my catering business that specializes in smoked meats. The name of the my business is called "hyderismokehouse." I have some pieces of the logo already identified but I need someone to put it all together for me. I've uploaded 3 pictures

Draft Logo - this is a logo that someone started for me. I want to make a couple changes to it: Face forward instead of side profile and I want the character to resemble the person in "photo 1", change his button down shirt to a chef's shirt, remove his chef's hat and add glasses.

So perhaps the guy facing forward with his arms crossed with the font along the bottom? And I'm open to suggestions!
