Logo Design Brief

I require a logo design for my NGO (non profit). We are primarily focused on training rural communities to produce Coconut Oil. I would like the logo to represent progress or growth....an example is the letter "O" in GROW being a coconut and sprouting into a coconut tree (just rough example- im open to new ideas, do something completely different if you can think of a better way to represent progress, and coconuts). I attached a map of the Solomon Islands
